Ingredients:
- 6 whole eggs
- 2 cups liquid egg whites
- 1 cup high protein cottage cheese
- 3 cups chopped spinach
- 3 tablespoons grated Parmesan
- ½ cup chopped sundried tomatoes
- ½ tablespoon dried dill + herbs of choice
- 1 teaspoon salt
Process:
- Preheat oven to 350
- Soak chopped sundried tomatoes in warm water for a few minutes while prepping other ingredients
- Drain tomatoes and add all ingredients besides the Parmesan to a large bowl
