Cinnamon might be one of the most medicinal spices hiding in your medicine cabinet. Cinnamon is one of the most well-researched herbs when it comes to blood sugar management and overall metabolic health. Cinnamon can be used in both savory and sweet dishes making it a really versatile herb as well!
These cinnamon-coco rolls are the perfect sweet treat! They are dairy/gluten-free and feature lots of cinnamon for flavor and blood sugar-balancing effects. Ingredients:
- 2 cups of nuts (almonds, cashews, walnuts, etc.)
- 1 ½ cups dates
- 1 teaspoon vanilla
- shredded coconut
- cinnamon
Instructions:
- In a food processor, add two cups of nuts (recommended 1 cup of almonds, ½ cup of walnuts, ½ cup of cashews) and process until pea size
- When nut mixture is processed, add in 1 ½ cup of pitted medjool dates, 1 teaspoon of vanilla extract, and optional sea salt. Process on high until sand size
- Take out half of the mixture and press onto parchment paper in a square shape. Aim for square to be approximately 1/4 inch thick
- Top with a thin layer of shredded coconut (or any desired toppings, just make sure they’re thin and rollable)
- In the remaining food processed mixture, add a generous amount of cinnamon and pulse until well combined and smooth
- Take the cinnamon mixture out and press evenly on top of the shredded coconut
- Start at one end and tightly roll up the dough until its tight
- Place the roll into freezer for 1-2 hours (the longer the better)
- Slice and eat whenever you need an energy boost
